Behind it rise the green cliffs of the island, and at their feet lie the faj\u00e3s, the flatlands that give S\u00e3o Jorge its character.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">History and identity<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Velas grew as a port and market town for the island&#8217;s cattle and cheese, and its squares and churches still reflect that quiet prosperity.
